“La Cucina del Gusto” – Sorrento cooking school is proud to present the original recipe of the Sorrento style tomato sauces.
Onion Sauce
Ingredients
- 2 tablespoons of olive oil
- Little piece of onion
- ¼ cup of white wine
- 3 cups of pulped tomato
- sea salt
- fresh basil
Preparation
Put some olive oil and the chopped onion in a frying pan and cook until the onion is golden brown . Then add ¼ of white wine and after 5 minutes the tomato sauce.
Cook for about 1 hour very slowly and add sea salt and fresh basil
Cherry Tomatoes Sauce
Ingredients
- 1 bunch cherry tomatoes (approx.20) (can substitute roma tomatoes)
- 2 tablespoons olive oil
- 1 sprig of basil (torn into pieces, not cut with a knife)
- sea salt
- 1 clove of garlic (mashed with flat side of knife or with hand, not chopped)
Preparation
Sauté garlic in the olive oil (in a frying pan). (Do not let the olive oil burn or smoke.) Next, remove the tops and cut the cherry tomatoes in half or smaller and add to the frying pan with half of the fresh basil and a pinch of salt. While simmering, mash with large fork. After approx. 10 minutes this delicious sauce will be ready to taste with a piece of bread. Add more salt as needed. Sauce may be refrigerated and used for up to 5 to 7 days.
Notes
Tear basil. Do not chop with a knife unless you need minced basil.
Don’t chop garlic. Mash to release flavour while cooking.
Garlic pieces can be removed at any time.
