Serves 4/5 persons
- 1kg octopus
- Extra virgin olive oil
- Salt and pepper
- Juice of a large lemon
- Chopped parsley
Preparation
Clean the octopus well and leave it in salted water for about one hour.
Wash and chop the octopus. Place the octopus in a bowl and dress with an emulsion of oil, salt, pepper and lemon. Sprinkle with the parsley and leave to marinate for about an hour before serving.
A variation could include the addition of boiled potatoes to give more consistency to the plate.
