The Margherita pizza was born in 1889 when Queen Margherita of Savoy, whilst visiting Naples was offered a pizza topped with mozzarella, tomatoes and basil, in honour of the Italian tricolours.
According to product specifications submitted for approval by STG (traditional specialties guarantee), the Neapolitan pizza must be cooked in a wooden oven and prepared according to two varieties: Pizza Marinara and Pizza Margherita.
The base ingredients are: flour milled by tender grain such as the “0” classification, beer yeast, mineral drinking water, peeled tomatoes or fresh tomatoes, salt and extra virgin olive oil. In the first case, you add garlic and oregano whilst in the second case, Mozzarella or fiordilatte and fresh basil.
