Ingredients
- 400g of flour
- 3 eggs
- 2 egg yolks
- 40g of butter
- 150g of baseball bat squash
- 300g of honey
- 150g of sugar
- grated rind of 1 lemon
- salt
- silver colour sugared almonds
- oil for frying
- citron and candied orange peel.
Preparation
Mix the flour with the sugar, eggs, butter, grated lemon and a pinch of salt. Knead well and leave to rest for two hours.
At the conclusion of this period, take the dough a piece at a time, forming logs half a centimeter in thickness and cut into cubes.
Lightly flour and fry in plenty of hot oil. In the meantime, boil the honey and sugar with 4 tablespoons of water in a large pan.
When the syrup has turned a golden colour, pour it on the struffoli with some of the candies and quickly and delicately stir with a wooden spoon until they are coated. At this point, place on a plate and serve with candied fruit and the sugared almonds.
